On Monday my boy went to the orthodontist and came home with sore teeth. He thought chocolate pudding might help ease the pain . I couldn't find my usual recipe so did a quick search and found my new favorite. We have made it two nights in a row. I think they will ask for it tonight too (but they won't get it). Everyone agreed it was the best chocolate pudding I've ever made.
Chocolate Cornstarch Pudding (from allrecipes.com)
Ingredients
- 1/2 cup white sugar
- 3 tablespoons unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 2 3/4 cups milk
- 2 tablespoons margarine or butter
- 1 teaspoon vanilla extract
Directions
- In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving.

Yum! I'm emailing it to myself so I will remember this the next time Anna gets her braces adjusted.
Wow, I've never actually made pudding from scratch unless you count Jello brand pudding from scratch, but that looks good. I may have to try that.
This is so much better than boxed pudding. And hardly any more work!
I make one like this but use half and half instead of milk.
